Danny's not exactly a dashing prince. And Sean isn't always sulky, there is something between him and Carys.

I don't know. But he's not really dashing.

Fine.
Out of interest, why does Carys choose Danny over Sean?

Because she does go for Sean at one point, and it just gets them into trouble. I'm not sure how yet. But she realises she completely changes around Sean, and she's not sure she likes who she's changed into. She knows Sean is dangerous, and considering the amount of danger they've already got around them, she wants someone safe. Danny is safe.
Possibly the wrong decision, but it's the one she makes.

Figured out a bit more...
Towards the end of the first book, there is definitely something going on between Sean and Carys. He, of course, has always liked her, since the first time he met her, and she's starting to see him in a new light.
Then, when it all goes to hell and Sean finds him and her refuge with the local Mafia equivalent, even though it gets them both into serious trouble, she's prepared to forgive him - he didn't know what he was getting them into, and he promises to get them out of it. Also, he's all she has left.
But then Sean gets involved in the criminal underworld and everything, making deals and suchlike which might make him more powerful. He says it's just to try to secure their freedom, but Carys worries that he might not be able to turn away from it once it's all over.
